Death of a paca in Amazonia

the following are photos of a dead paca (jungle rat) that our guide found and shot during a night hike with a shotgun. The next morning, he cleaned, skinned and pieced apart the body... then we ate him!


































our guide just chucked the guts down the river. I think he hoped that they would just sink to the bottom and act as fish food, but they just floated downstream. We did not find any remains an hour later after we left the campsite.











frying up the legmeat. It tasted great! It was more tender than I would have imagined it to be- more fatty than chicken, but less flavor than pork.

gnawing away at some smoked paca.  Since there was no refrigerator, the paca had to be salted while we traveled around for the next two days. Unfortunately, my guides did not bleed out the salt before cooking and serving it.  Very, very salty!
